Keto Cornbread Muffins

Cornbread is a staple of living in the South. Even growing up in Georgia, I have never been a huge fan of cornbread. These keto-friendly cornbread flavored muffins however, are absolutely delicious and make the perfect sliders for pulled pork and so much more! Once you try them, you'll wonder what took you so long to make them!
1 cup almond flour
3/4 tsp baking powder
1/2 tsp salt
2 large eggs
2 tbsp butter
1/4 cup full-fat sour cream
10 - 15 drops OOOFlavors Cornbread Flavored Concentrate
5 - 10 drops OOOFlavors Sucralose or sweetener of your choice
*Additional options: green onions, finely diced jalapeños, shredded cheddar cheese

Preheat oven to 350 degrees F.
In a bowl, mix the sour cream, softened butter, eggs, OOOFlavors Cornbread Flavoring, and OOOFlavors Sucralose.
Add the almond flour, baking powder, salt, and mix again.
Divide the batter into 5 - 6 muffins in a silicone muffin mold.
Bake for 20 - 25 minutes, until the edges and top are slightly browned.
