Veracha Keto Tacos

Tacos are one of our all-time favorite foods and one of the first things we sought to make keto friendly. These tacos feature True Made Foods Veracha sauce, which we pretty much put on everything now. Using our Instant Pot to make the shredded chicken for these tacos resulted in a super quick, easy, and delicious meal.
True Made Foods uses more than a full serving of real vegetables in every bottle, making their sauces naturally sweet. The Veracha has 0 added sugars and 0 carbs per serving.
1lb shredded chicken (2 - 3 breasts)
We used an Instant Pot to cook our chicken. You are more than welcome to make shredded chicken however you like or shred a store bought rotisserie chicken. Our Instant Pot Shredded Chicken recipe can be found here.
2 cups shredded cheese
1/4 cup True Made Foods Veracha Sauce
Your favorite taco toppings (we used shredded lettuce, chopped cucumber, salsa, cilantro crema, and cilantro)
Optional: For cilantro crema you will need fresh cilantro and 1 cup of sour cream
Taco Rack - This is our favorite one! Plus you can put that bad boy directly on the grill!!
Preheat oven to 375 degrees F.
Dump a 1/2 cup of shredded cheese onto a parchment paper lined sheet pan and form cheese into a 5" - 6" circle. We were able to fit two 6" taco shells on one sheet pan.
Bake for 10-13 minutes, until cheese is bubbling.
Remove from oven and hang over a taco rack. OR you can use a large spoon/spatula propped on two upside down large cups to hang your cheese shell on to cool.
In a medium bowl, mix shredded chicken and Veracha sauce.
Once taco shells are cooled, begin adding your favorite toppings. We added Veracha shredded chicken, shredded lettuce, chopped cucumber, salsa, cilantro crema, and more fresh cilantro.
Optional Cilantro Crema: Add 1 cup of sour cream and 1/4 cup fresh cilantro to a large cup and blend with an immersion blender. (We have this immersion blender and love it! Plus it comes with a super convenient cup and lid for blending and storing!)
