Maple Bacon Cinnamon Rolls

Something about warm, gooey cinnamon rolls just makes me want to curl up on the couch with a BPC in my favorite robe. It's pink with Boxers on it (duh) in case you were wondering. ;) Add maple and bacon to that equation and I think we have a match made in heaven. These Maple Bacon Cinnamon Rolls are so yummy you won't want to share.


I N G R E D I E N T S


Rolls:

1 1/2 cups mozzarella cheese

3/4 cup almond flour We use this!

2 oz cream cheese

1 egg

1/4 tsp baking powder

3 tbsp erythritol

1 tbsp cinnamon

3 tbsp bacon fat

4 pieces of bacon


Frosting:

2 oz cream cheese

1/2 tsp maple extract

1 tsp cinnamon

1 tbsp erythritol We use this!




I N S T R U C T I O N S


Preheat oven to 400 degrees.


Chop up raw, cold bacon into bite sized pieces and cook. When done cooking, set aside on paper towel lined plate. *Cold bacon will cut up easier than warmish floppy bacon.


Combine mozzarella, almond flour, baking powder, and cream cheese in a medium bowl and microwave for 1 minute. Stir. Microwave for additional 30 seconds. Stir. Add egg and mix until dough forms.


Spray 2 pieces of parchment paper with coconut oil. *Or whatever oil you prefer, it just helps it to not stick. Place the dough between the 2 pieces of parchment paper and roll into a 1/4" thick rectangle shape.


Spread bacon fat over dough then evenly sprinkle cinnamon, erythritol, and bacon bites over entire surface.


Roll into a jelly roll shape, making sure to keep as tight as possible. Cut roll into approximately 15 pieces.


Place pieces on a parchment paper lined baking sheet and bake for 10-15 minutes.


While rolls are baking, add frosting ingredients to a small bowl and mix together.


Once the rolls are done, top with frosting and more bacon!
